Vegan ginger oaty biscuits

1 cup whole organic oats, roughly blended to form a course flour

4 tsp ground ginger

1/2 cup melted coconut oil

sea salt

1 cup maple syrup or runny honey

1 tsp vanilla extract

1 tsp bicarbonate of soda

Preheat the oven to 180

Blend all the ingredients in a bowl. Use a tablespoon to scoop and create little balls and place onto baking parchment lined tray. Press the balls down into thin discs with a good amount of room between each. Stab each one 3 times with a fork to allow heat to distribute evenly.


Bake for about 15 minutes or until golden brown at the edges.Allow to cool on a rack for at least 20 minutes.
