20 minute comfort bowl

I go for this recipe when I'm in need of seriously comforting and wholesome food that gives me a hug from the inside.  

This is really easy, healthy and quick. Vegans, leave the feta or swap it for a creamy salty cashew cheese.


2 spring onions, chopped

handful black olives, torn in half

fresh parsley or dill to serve  

teaspoon cumin seeds

sea salt  

Organic Greek feta  

1/2 cup quinoa  

small sweet potato, cut into small cubes  

organic low salt veg stock cube  

3 cauliflower florets, bite sized pieces  

preheat the oven to 200 degrees C


In a great proof tray, rub olive oil, a pinch of sea salt and the cumin seeds into the cauli & sweet potato cubes - whack in the oven for 20 minutes

In the meantime,  bring your quinoa to the boil with the stock cube 

get a big soup or salad bowl & add the onions, olives, parley and cheese  

After 20 minutes , the quinoa should be fluffy and the potatoes and cauliflower starting to look crisp and slightly golden.

Take out of the oven and tip the veg including the oil into the bowl, stir together and then top with more fresh herbs and some toasted seeds if you have some to hand. 


serve warm
